Southwest Wheat-berry Mix
Use this vegetarian meat substitute for tacos, burritos or mix in a can of beans for a quick and nutritious vegetarian chili!
Ingredients: ATG Amber wheat berries, dehydrated red pepper, 7 spice mix, dried herbs, roasted paprika, dehydrated onion, child powder.
On the stovetop: Dump 1 cup of ATG Wheat Berry Mix and three cups of water into heavy saucepan. Bring to boil, reduce heat and simmer for 30 minutes. Test for doneness, should be chewy but not tough. Can be served warm as meatless filling, or in salad.
In an Instant Pot: To the Instant Pot add 3 cups of water, 1 cup dry ATG mix. Set manual for 30 minutes, seal and cook until done.
To make a chili: Sauté a chopped onion in olive oil, stir in 2x14oz can diced tomatoes, 2x15 oz can black beans. Stir in cooked wheat berries, Remove from heat and top with avocado and cilantro.
